Leave about two inches in between whoopie pies for spreading. Edges will be lightly browned. Allow cookies to cool for 5 minutes on baking sheets before removing to a wire rack to cool completely. To make the cream cheese filling, use a large bowl and beat together cream cheese, butter, vanilla and salt until well combined.

Add powdered sugar in two batches and beat until smooth. To assemble the whoopie pies, spread the cream cheese filling onto the bottom of a cookie, and top it with another cookie, forming a sandwich. Serve fresh or refrigerate any leftovers and let them rest for 20 minutes at room temperature before serving.
